Beef Shank Stew

Ingredients

  • 1/2 c flour
  • 1 tbsp chicken bouillon powder
  • 4 Angus beef bones in shanks
  • 2 tbsp peanut oil
  • 1 large onion
  • 2 bay leaves
  • 2 large tomatoes
  • 2 large potatoes
  • 2 celery
  • 2 carrots
  • A bunch of cilantro
  • 1 tsp blackpepper
  • 2-3 tbsp tomato paste
  • Broth chicken, beef, vegetables

Instructions

  • On a plate, mix flour and chicken bouillon powder, set aside
  • Slice onion and veggies, separately
  • Heat oil in instant pot, brown beef shanks, then coat them in the flour
  • Using the grease, saute onion til fragrant, then add in bay leaves and veggies, stir, add in tomato paste, saute for 2-3 mins, turn off the saute feature
  • Top veggies with coated beef shanks, pour enough broth to cover (I like a mixture of chicken and beef broth for tastier result), and click stew options
