Banana Muffins

Ingredients

  • 2 c strong baker’s flour
  • 1 tbsp BP
  • 1 tbsp flaxseeds
  • A pinch of salt
  • 1 handful walnut halves
  • 1 handful semi sweet chocolate chips
  • 2 ripe bananas
  • 2 eggs
  • 1 tbsp vanilla essence
  • 6 tbsp peanut oil
  • 1/2 c of milk
  • 1/4 c packed demerara style brown sugar

Instructions

  • Chop roughly walnut, set to side
  • Grease muffin pan, set to side
  • Preheat oven to 400 F
  • Mix dry ingredients in a bowl, then mix in chopped walnut
  • In a food processor, mix eggs, bananas, oil, essence and sugar.
  • Pour mixture into flour mixture, and mix until just dampened
  • Divide batter and bake for 18-20 mins
