Banana Crumb Muffins

Ingredients

  • 1/4 c unsalted butter melt
  • 1/2 c flour
  • 2 tbsp cinnamon sugar
  • 1 tbsp coconut sugar
  • 2 c flour
  • 1/4 c coconut sugar or brown sugar
  • 1/4 regular white sugar
  • 1 tbsp BP
  • A generous pinch of salt
  • 1 large ripe banana
  • 1/2 c milk
  • 2 eggs
  • 1/2 tbsp lemon juice
  • 1/2 tbsp vanilla essence
  • 6 tbsp vegetable oil

Instructions

  • Mix flour and sugars in a small bowl, stir in melted butter, creating crumbs, set to side
  • In a food processor, mix eggs, milk, banana, oil, juice and essence to a smooth consistency
  • In a bowl, mix flour, sugars, BP, salt, until completely combined, and make a well in center
  • Preheat oven to 400 F
  • Grease muffin pan, am using large muffin pan, of 6 muffin holes
  • Pour banana mixture into flour mixture, mix until just combined
  • Divide batter into 6 muffi holes, then top with the Crumb topping
  • Bake for 18-20 mins
