Hungarian Beans Soup

Ingredients

  • 3 c mixed beans
  • Water
  • 1 large onion
  • 6 Garlic
  • 4 bay leaf
  • 1 tsp black peppercorns
  • 5 carrots
  • 1 tbsp crushed parsley
  • 2 beef bouillon cubes
  • 1 heaping tbsp chicken bouillon powder more or less, to taste
  • 1 bag chicken Hotdogs
  • 2 beef sausage

Roux (Thickener)

  • 1/3 c flour
  • 1 heaping tbsp sweet paprika powder
  • 2/3 c water more or less, as needed

Instructions

  • Rinse and soak beans for 30 mins, strain then dump into Instant Pot. Pour water until max line. Add in halved garlic, onion, peppercorns and bay leaf. Close the lid, click soup and cook for 1 H and 40 mins
  • Meanwhile, slice carrots, sausage and Hotdogs
  • Turn off Instant Pot, release steam. Once steam is gone, take off lid.
  • Turn Instant Pot back on, add in carrots and flavoring. Cook for 10-15 mins
  • Meanwhile, dilute flour, sweet paprika powder and water.
  • Add in sliced sausages into the pot.
  • Pour mixture into the pot, stir and let boil for 5-8 mins
