Ayam Ungkep - Ayam Goreng

Indonesian fried chicken

Ingredients

  • 1 lemongrass
  • 2 salam leaves Indonesian bay leaves
  • 2 tsp chicken bouillon powder add more if needed, up to 1 tbsp
  • 1 med onion
  • 5 garlic
  • 5 candlenut
  • 1 thumb ginger
  • 1/4 tsp turmeric powder
  • 1/4 tsp galangal powder
  • 1/2 tsp ground coriander
  • 1/4 tsp white pepper powder
  • 450 ml water
  • 1.7 kg chicken pieces

Instructions

  • Place lemongrass, salam leaves, anc bouillon powder into a pot
  • In a blender, turn garlic, onion, candlenut into fine paste, pour into the pot
  • Add in spice powders as well
  • Pour water, stir to combine
  • Stir in chicken to coat evenly
  • Cook in low heat until chicken cooked through
  • Store in fridge until ready to fry (leftover spices in the pot can be used to marinade tofu or tempeh, btw)
  • Fry chicken in air fryer at 400 F for 18-20 mins, until golden brown and crispy
