Peanut Sauce Grilled Chicken

Ingredients

  • 4 x 1/3 c unsalted roasted peanuts
  • 1 small-medium onion
  • 5 garlic
  • 5 candlenuts
  • 1/3 c sunflower oil
  • 1/3 c water
  • 1/3 c dark brown sugar
  • 1/4 tsp cayenne powder
  • 2 c water
  • Chicken bouillon powder to taste
  • Sweet soy sauce to taste kecap manis
  • 2 kaffir lime leaves optional
  • Chicken thighs

Instructions

  • In food processor, turn peanuts, oil, water, onion, garlic, candlenuts into fine paste. Pour into a pan, and add kaffir lime leaves, more water, and sugar. Season mixture with chicken bouillon powder and sweet soy sauce. Let cool to room temperature.
  • In a large bowl, place chicken thighs, pour some of the peanut sauce, and drizzle with sweet soy sauce. Coat evenly and marinade for at least 30 mins
  • Grill chicken until cooked through and serve with peanut sauce.
