Ayam Bakar Rica

Ingredients

  • 13 curly type chillies
  • 7 garlic
  • 4 shallots
  • 2 cm ginger
  • 1/2 teaspoon Terasi Indonesian hard shrimp paste/Belachan
  • 1 lemon grass
  • 3-4 lime kaffir lime leaves
  • salt sugar and MSG (if desired) to taste

Instructions

  • Spread evenly the fresh lime juice and a bit of salt all over the chicken, leave it for 30 minutes.
  • Cut the chicken into 5-8 portions; wash clean then grill the chicken for about 15 minutes only.
  • Using a blender or mortar, mix well the "To Blend" ingredients.
  • Saute the blended ingredients until it produces nice scent,
  • then add tomato, water, salt, then the chicken. Cook until all ingredients absorbed into the chicken meat.
  • Grill chicken in the oven again until well done and turn to golden brown color. (150 C)
