Ingredients

  • Eggplant as many as you like
  • Tempeh just cube them, about a block or two
  • Naan bread or any other flat bread of your choice

Peanut Sauce

  • 500 g roasted peanuts
  • 3-5 red bird eye chilies
  • 3 garlic sliced and fried til golden brown
  • 3 kafir lime leaves
  • Brown sugar to taste
  • A pinch or two kaempfaria galangal powder
  • 1 thumb tamarind seedless, soak in 1/4 c hot water
  • Enough water thicker or thinner sauce depending what you like
  • Salt to taste

Instructions

  • Grill the tempeh, eggplant, and flat bread
