I just had a nice bowl of pho (Vietnamese soup), topped with basil leaves that I grew myself ????
Making your own pho is always nice, but we can hardly find Thai basil to top our homemade pho, so I planted some seeds a couple of weeks ago ?
Today’s soup is not pho nor Vietnamese though, but rather a Hungarian soup. In fact, it is not really soup, soup, but rather to stew….or more to thicker broth soup ????
Sometimes it’s not easy finding or translating words to English ?
- 500 g green beans
- 1/2 of large onion
- 5 garlic
- 2.5 L water
- 1 box mushroom
- 2 bouillon cubes
- 1 tbsp celery salt
- Roux
Roux:
- 1/3 c flour
- 1 tbsp paprika powder
- 3 tbsp vegetable oil
- Cold water as needed

Hungarian Green Bean Stew
Ingredients
- 500 g green beans
- 1/2 of large onion
- 5 garlic
- 2.5 L water
- 1 box mushroom
- 2 bouillon cubes
- 1 tbsp celery salt
- Roux
Roux
- 1/3 c flour
- 1 tbsp paprika powder
- 3 tbsp vegetable oil
- Cold water as needed
Instructions
- Skin and slice mushrooms. Saute to soften
- Place everything in a pot, bring to boil, stir in softened mushrooms
- Add in bouillon cube and celery salt
- Thicken with roux
- Place everything on nonstick, stir
- Once clumpy, stir in water, and keep stirring til become paste
- Pour paste into pot, and quickly stir, to thicken
