Summer is finally here, hot damn! ????
So naturally, Summery cooking, baking, happening in the kitchen (thank goodness for counter top oven and air conditioning, right? ?).
Today I prepared jam…well lemon curd…does curd belong to jam/spread family? ?
My oldest loooovvveesss citrus flavor much, he can suck on fresh lemon and/or lime, like licking a lollipop. Which is funny, because my youngest doesn’t like citrus flavor much, only sweet Mandarin ?
Anyhoo.
When I was cooking the curd, both came down to the kitchen and said, hmmm what are you cooking, smells so nice, like something fresh, but also something else.

The last time I made proper lemon curd, my oldest was only 1 year old ? Yep. Been too freaking long.
Anyways…here are the ingredients!
- 600 g lemon
- 2 c sugar
- 4 eggs
- 110 g butter

Homemade Lemon Curd
Ingredients
- 600 g lemon
- 2 c sugar
- 4 eggs
- 110 g butter
Instructions
- Grate lemon skin (or peel and chop them), set aside
- Squeeze lemon for the juice, set aside
- Whisk sugar and lemon til combined
- Bring to a boiling point, keep stirring, until thickening
- Add in the skin, juice, and butter
- Keep boiling til thickened, stirring continuously
- Slightly cool it before filling the jars
