Prepared this brownies for a lunch gathering with some Indonesian ladies downtown 😀
I love pairing chocolate and mint, they belong together, don’t you think?
1 oz (2 squares) unsweetened chocolate
1/2 c butter (unsalted, room temperature) or margarine
2 eggs, beaten
1 c sugar
1/2 c flour
Frosting:
1 1/2 c icing sugar
3 tbsp butter, unsalted, room temperature
2 tbsp heavy cream 35 %
1 tsp peppermint extract
a couple drops green liquid food coloring
Method:
Preheat oven to 350 degrees F.
Grease an 8 inch square pan (if not rectangular or round pan is fine)
Melt chocolate in double boiler or microwave or steam it. Remove from heat and let cool slightly
Beat sugar and egg to combine then mix in melted chocolate, stir
Stir in flour and chopped/sliced glace cherries until well blended
Pour mixture into greased pan and bake for 20 minutes (until knife inserted comes out clean)
Turn oven off and leave in oven for another 5 mins then remove and let cool on cooling rack before frosting
Frosting
Cream icing sugar, butter and heavy cream until fluffy
Beat in food color and extract until combined
Spread on brownie and refrigerate until chilled
Slice and enjoy 🙂
