An easy brownies that I made using Easter chocolate eggs.
This is actually my go- to Rocky Road Brownies but since this was for Easter party, I tweaked the recipe. I knew the chocolate eggs would melt while baking, thus I came with the name on the title box, Egg Hunting In The Mud Brownies. Genius right? hahaha
These brownies are super chocolatey and one slice isn’t enough, in my opinion 😀 But that’s just me, maybe, as I am a big fan of brownies 😀
You can slice them squares obviously, but this time I cut them using a cookie cutter 🙂
Ingredients
- 3 potatoes, skinned, boiled, mashed
- 3 squares Baker’s milk chocolate
- 3/4 cup of butter
- 3/4 cup of granulated sugar
- 1/2 tbsp of vanilla essence
- a pinch of salt
- 4 whole eggs, beaten
- 1 c of flour
- 1 small bag mini MnMs
- 2 handful regular size MnMs
- 3 small bags of mini chocolate eggs
- 2 handful regular size chocolate eggs
Method
- Preheat oven to 350 F
- Melt chocolate squares and butter on low heat, take off from heat, let stand for 15 minutes
- Add in beaten eggs, vanilla, salt, mix well, followed with mashed potatoes
- Stir in flour
- Pour batter into parchment lined pan and top with chopped chocolates and chocolate eggs
- Bake for 20-25 minutes and slice once cooled to room temperature
