Love this cake much. Recipe is from my husband’s late grandmother 😀

Bring to boil on medium heat until liquid absorbed:
120 g rice, rinsed
500 ml milk
100 ml water
Cool for 10 mins then stir in:
20 g unsalted butter
1/2 c raisins (or dried cranberries/blueberries)
2 eggs, separated
1tsp vanilla essence
1/2 tsp lemon juice (or 1 lemon skin, grated)
Beat yolks with essence and juice (or lemon skin), then stir into rice
Whisk egg whites until stiff, then fold into rice
Bake on preheated 350 F convection oven, for 40 mins
Cool completely before slicing (also nice served chilled)
