My creamy cauliflower soup that is soooo simple to make. And bonus side? It’s creamy, yet low in carb 😀
Ingredients
1 tbsp chopped fresh chives
2 tbsp vegetable oil (olive oil is best)
1 cauliflower head
3 c vegetable/mushroom/Thai broth (Thai broth would have different end result (in flavor) than veggie or mushroom broth, of course)
3/4 c hulled hemp seeds (the secret!)
1/4 c nooch
Method
- Heat the oil then stir in cauliflower, cook for 5 mins, to soften
- Pour in broth and keep cooking until cauliflower is tender
- Pour cauliflower and its broth into an electric blender, add in the rest of the ingredients, process until smooth
- Serve immediately
You can top your soup with croutons, obviously, but then it will not be low carb anymore 😛 You can also top it with more nooch (I just sprinkling this magic dust on everything haha), or more chopped fresh chives, the possibility is endless. But if you’d like to keep the creamy soup low carb, serve as is (with a drop or two of hot sauce ;-)) Hope your new week is off to a good start. As for this household?
