One of our dear hamsters died the other day, sad time for us, so I baked tons of SUGAR for the boys to cheer them up, and one of them were these chocolate chip cookies.
They had bananas in them but they are nice crunchy cookies opposed to soft cookies when bananas in used.
I added some hazelnut and PB2 powder in them just for extra nutrition but I could not taste the cookies to be peanut-buttery if you get what I mean.
Here is the recipe if you’d like to give them a try.
– Mix 2 tbsp PB2 powder with 2 tbsp hazelnut meal and 2 tbsp icing sugar, set aside
– Melt 3/4 c vegan margarine
– Mash 2 ripe bananas and add in 1 c coconut palm sugar, 2 tbsp sugar, 2 tbsp of hazelnut meal mixture, and 1 tsp vanilla essence
– In a bowl, mix 2 1/4 c flour, a pinch of Himalayan salt and 2 tsp of cornstarch. Mix in 1 c DF chocolate chips
– Mix dry, mix in wet, combine well
– Drop by 2 ice cream scoops and flatten dough
– Bake on preheated 350 F convection oven for 12 mins (soft middle, crunchy outside)
– Cool on rack

Ingredients
