Growing up in Indonesia, my family often grilled corn, sooo good. May seem so simple, but it became a festive dinner for us, whenever we grilled corn as that would only mean family gathering 😀
We would just sprinkle it with salt, and that was it, sooo special for little kids 😀
These following corn has similar taste to taco, and my 5 yo would call these grilled corn as TACO corn 🙂
You can use fresh or freshly boiled corn, as many as you like.
You can use light sour cream or reduced fat sour cream.
You can use freshly chopped or dried cilantro (although fresh would make it even better!)
You can also add a drop or two of lime juice into the mixture and freshly ground black pepper (omit pepper if its for kids).
For 4 servings of corn, you will need at least:
4 corns
1/2 c sour cream
1/4 tsp cumin
1/4 tsp garlic powder
1/4 c chopped cilantro
1 tsp cayenne/chili powder (omit if its for kids!)
Boil corn, drain, grill on medium heat, for 8-10 minutes, turning occasionally (you can grill fresh corn though, we boil them first because that is the way my kids would eat them haha).
Stir the other ingredients except cilantro (the measurements above are only approx. so adjust to your liking!)
Once corns are grilled, coat with sour cream and sprinkle with cilantro and cayenne powder.
Enjoy 🙂
