I baked biscotti which are on the softer side. I heard the softer side is known as American style biscotti as the original Italian Biscotti is hard, perfect for dunking it in milk, tea, hot cocoa, or coffee.
My biscotti is obviously of apple as I mentioned on a couple posts down that we went apple picking and got tons of them. So yeah, I turned some into biscotti 😀
The following biscotti is almost like apple pie, because of the spices. The house smelled wonderful when they were baking, and the boys thought I was making apple pie hahaha I fooled them, I guess.
My youngest likes them on the crispier side, which I will note it on the recipe of the differences on baking should you like to try and have your biscotti either soft or crispier.
Yes, normally biscotti is with almond, but for the following Autumn biscotti, I felt that almond would not be a good pair with the apples and spice, so I used walnut.

– 2 1/2 c AP flour
– 2 tbsp flax meal
– 1 c sugar + 1/4 c coconut sugar (or brown sugar)
– 1/2 tsp each BP and BSoda
– 1/2 tsp each cinnamon powder, nutmeg powder, allspice powder
– 3/4 c homemade applesauce (storebought is fine)
– 2 tsp vanilla essence
– 4 small apples, diced
– 3/4 c nut milk
– 1 handful walnut, chopped
– 1/3 additional flour
I have this very useful onion chopper from Vidalia, I used the smaller mold, it creates the perfect size for the apple, btw.
– Mix dry ingredients, pour wet ingredients in center, stir to combine.
– Add in apples and walnut, knead (dough will be wet)
– Knead in the last flour and dump onto parchment paper lined cookie sheet
– Shape into a log
– Bake on preheated 350 F for 30 mins
– Take out sheet from oven, let log stand for 10 mins
– Lower temperature to 300 F
– Slice log with serrated knife
– Rebake slices for 30 minutes
NOTE: once biscotti are baked, continue air frying it for 5-7 mins, for crispier dunking type biscotti

Biskuit Apel

Hari ini aku mau berbagi resep untuk buat biskuit khas Italia yang dikenal dengan sebutan biscotti.
Katanya sih kalau di negara-negara di Amerika Utara, biscottinya lebih lunak ketimbang biskuti asli Itali, yang aslinya keras dan hanya cocok untuk dicelup di minuman kesukaan kita.
Biscotti buatanku sih, kubuat sebagian keras seperti aslinya, dan sebagian lagi agak lunak seperti yang biasa ada disini. Kalau teman mau ikutan buat, ntar baca catatan dibawah yah 🙂
Masih dalam rangka menghabiskan 2 tas plastik penuh apel hasil memetik sendiri, salah satunya yah kubuat jadi biskuit ini. Waktu dipanggang seharum seperti bikin pai buah apel, anak-anak sampai kecele, mereka pikir bakalan makan pai apel, namun ternyata yang keluar dari oven berbeda wkwkwkw
Aslinya sih emang biskuit Italia tuh pakai kacang almond yah, tapi karena aku agak nyeleneh, aku ganti dengan kacang walnut. Bagiku hasilnya lebih mantap untuk dicampur dengan bumbu-bumbu yang kupakai.
Yuk di tengok nih resepnya kalau mau coba juga 😀
– 2 1/2 gelas terigu
– 2 sdm biji rami yang sudah dihaluskan
– masing2 1/2 sdt bakpulver, soda kue, lapis legit bubuk, kayu manis bubuk, pala bubuk
– 3/4 gelas saus apel buatan sendiri ataupun beli jadi (apel masak dihaluskan)
– 4 buah apel ukuran kecil, tanpa kulit, cacah halus
– 3/4 gelas susu cair
– 1 genggam kacang walnut, cacah halus
– 1/3 gelas terigu tambahan
Untuk mencacah walnut dan apel, aku agak curang wkwkwk aku pakai alat seperti difoto ini.
– Campurkan bahan kering, tuang bahan basah, aduk
– Masukkan apel dan walnut, uleni (adoan lengket ditangan)
– Beri terigu tambahan, dan letakkan adonan ke loyang yang sudah dialasi kertas kue
– Panggang pada oven 350 F yang sudah dipanaskan terlebih dahulu, 30 menit
– Keluarkan loyang dari oven, diamkan 10 menit biar agak dingin
– Turunkan panas oven 300 F
– Iris menjadi biskuit
– Panggang kembali 30 menit
CATATAN: Agar biskuit mirip dengan khas Italia, teman bisa memanggang kembali setelah 30 menit, dengan menggunakan metode airfry, selama 5-7 menit. Hasilnya akan cocok untuk dicelupkan di susu atau minuman kesukaan teman
