Snowing hard outside, all is white. Glad that we have changed my car’s tires to Winter tires. Slippery road has commenced 😅 Halloween won’t be fun this year it seems 😬 It’s supposed to stop sometime today, I hope the weather prediction is correct.
We were in Vancouver for 2.5 days last week. Before heading there, I had a slight of cold. While there, it continued. Now back home, it’s worsen. Meh. Throat hurts and itchy as well. Why cold doesn’t last only a week top. Like, whenever I get the cold, doesn’t seem that it’s truly gone, and then I get sick again. Just keeps dragging on. Like what the hell. I will end up with liver problem from meds instead from delicious booze 🙄😅🙄😅
For today’s recipe, it’s with eggnog. Yep. Christmas spirit has commenced as well 😁 Even more so with the whiteness outside 🤣
2.5 c strong baker’s flour
1 tbsp BP
A pinch of salt
2 tbsp Cocoa powder
1 tbsp Flaxseeds
2 eggs
1 c of eggnog
1/2 tbsp Vanilla essence
6 tbsp peanut oil
1/2 c packed demerara style brown sugar
Semi sweet chocolate chips
Mix dry ingredients
Pulse wet ingredients in food processor
Mix dry and wet until just dampened, do not over mixed
Spoon the thick batter into greased cupcake pan, top with chocolate chips, and bake for 18-20 mins on preheated 400 F
Cool on rack 😎
Chocolate Eggnog Muffins
Ingredients

- 2 tbsp Cocoa powder
- 1 tbsp Flaxseeds

- 1/2 tbsp Vanilla essence
