It’s a sunny morning, which is lovely. Yesterday was wet, also hailing at some point, but it was lovely too as there was a nice big rainbow on the sky 😊
Busy day today. Therapy, virtual clinic, and husband’s mother lands in the afternoon. I can’t wait for this week to be over already and it’s only Tuesday 😅
For today’s recipe, is what Indonesians refer as Bolu Kukus, steamed sponge cake 😊
1 c sugar
2 egg
1 tsp ovalett (cake emulsifier)
1 3/4 c flour
250 ml lukewarm milk
2 tsp purple yam flavoring
Chocolate rice (chocolate sprinkles)
Preheat steamers and line molds with cupcake wrappers
Cream eggs, sugar, emulsifier until pale and fluffy, for 7 mins
Mix flavoring to milk, stir to combine
Add a little flour into egg mixture, mix, add a little milk into the mixture, repeat alternately, while also adding 2 tbsp chocolate rice into the mixture
Spoon batter onto prepared mold, sprinkle top with more chocolate rice
Steam for 15 mins, wrap the lid with clean towel so no water drips to the cake.
