Rainy day here. Rain, rain, rain. Cold days as well. Temperature dropped and we had frost warning in the region yesterday. I hate that it is getting much closer to winter. I don’t wanna let go backyard days 😅 Sometimes I’d say to myself that I cannot wait til both boys are out of high-school, so we can move tf out of extreme Winter, but then, I love my house so much, and am sure by then, my backyard would be way better than today, and I will be less energetic as I would be closer to being 55 yo. I may not want to move at all picturing myself boxing and unboxing boxes, YIKES! 🤣😅🤣😅
For today’s recipe, it is Ginger Cookies. They are great for school lunchbox for my boys 😉
2.5 c strong baker’s
1 tsp BSoda
A pinch of salt
1 tbsp ginger powder
2 tbsp sugar
1/2 tsp ginger powder
1/4 tsp cinnamon powder
2 eggs
1 c sunflower oil
1.5 c dark brown sugar
1/2 tbsp vanilla essence
Mix flour, soda, ginger, salt in a bowl. Set aside.
In a small bowl, mix sugar, cinnamon, and ginger. Set aside.
In another bowl, cream eggs, oil, sugar, and essence until well mixed, then add in flour.
Scoop per tbsp, roll on sugar coating, place on ungreased cookie sheet, flatten a little. Repeat steps until all used up.
Bake cookies on preheated 350F for 8-10 mins
Cool on cooling rack completely before storing.
