Raining again today. Wet, wet, wet. For sure I have the cold. Colder season is coming, cold and flu upon us as well haaaattttcchhooooo 🤧 So not fun. I managed to have morning walk yesterday tho, even though it was chilly, it wasn’t raining. Regardless, I caught the cold anyways 🤣 Been feeling it for days now, just getting worse. So much joy 😅

Since it’s pumpkin, apple, golden leaves season. I have pumpkin muffin recipe to share today. Soft, fluffy, all around nice pumpkin muffin, is what I like 😍
2 c strong baker’s flour
1 tbsp BP
A pinch of salt
1/2 c semisweet chocolate chips
1/2 c raisins
1/2 c walnut halves
2 eggs
1/2 c + tbsp demerara style brown sugar
1 tbsp vanilla essence
1/2 c pumpkin puree
1/2 c milk
Cinnamon powder a pinch
Allspice powder a pinch
6 tbsp peanut oil
Cinnamon sugar
Ginger powder
Grease muffin pan with peanut oil, set aside
Preheat oven to 400 F
In a bowl, mix flour, BP, salt, raisins, choc chips and walnuts
In another bowl, beat eggs, milk, puree, sugar, essence, spice powders and oil until fully combined
Fold in dry ingredients, mix until just combined
Divide into 6 and top with cinnamon sugar and ginger powder
Bake for 18 mins
