It’s sunny but windy today. Autumn’s air for sure. Most of my annual flowers are wilting as well. Darn it 😅
As mentioned the other day, here is Burnt Cheesecake (Basque Cheesecake). It is odd that regardless the look, it doesn’t taste burnt. Interesting for sure. Yep. It’s one of those Ig or TikTok made famous recipe. I believe i saw it back in 2019 of not 2020, during covid, where it was trending, but not as booming as sourdough baking that time, so only now I finally caved in and try.
This cake is creamy regardless only using 1 block of cream cheese. It is also without flavoring. Almost like New York Cheesecake, so original cream cheese flavor.
You can bake this in regular oven or in air fryer. At 20 minute mark, you will get nice brown color, however I continued air frying the cheesecake to 25 mins, per recipe, to get the burnt color. Some people like the brown surface rather than burnt, some other prefer the darker surface. It’s up to you 😊
Original recipe is from a cooking group, that I modified the measurement just slightly.
1 block of cream cheese
3/4 c icing sugar (original 1/2 c)
3/4 c heavy cream 33% (original 1/2 c)
3 eggs
2 heaping tbsp strong baker’s flour – almost close to 2.5 tbsp (original is 2 tbsp flour)
Using all in one method, mix all ingredients until smooth texture.
Pour mixture into 6inch pan, lined up with parchment paper.
Air fry on 390F for 25 mins
Cool to room temperature, chill before serving (an H or two is sufficient, original recipe calls overnight. We served ours after chilling 3 H as we were so ready to try the cheesecake after dinner 🤣)
