Had leftover Pad Thai sauce 🙂 I checked the ingredients on the pad thai sauce packaging, seems no animal products but spices, here is crossing fingers 🙂
Half a bag of baby carrots, thinly sliced into sticks or grate into thin long sticks
1 c white quinoa
1.5 c water
Bring to boil then simmer uncovered for 10-12 mins, until water absorbed
2 c soy curls, soaked in hot water for 1-2 mins, drain
1/4 large onion, sliced
3 garlic sliced
1 tbsp olive oil
1/2 tsp ready to use minced ginger
Stir in baby carrot, cook for 2 mins, covered
Stir in 1/2-1 tsp sesame oil
Stir in soy curls and quinoa
Season with Maggi liquid seasoning, Vegeta powder and 1/2 bag of VH pad Thai sauce
Stir in 1 c frozen spinach, take off from heat
Serve immediately

- Saute onion, garlic, ginger in olive oil
- Stir in baby carrot, cook for 2 mins, covered
- Stir in 1/2-1 tsp sesame oil

- Stir in 1 c frozen spinach, take off from heat
