When you are living veganish, but missing (shrimp) Pad Thai, soy curls to the rescue 😀
1 shirataki noodle, rinse
1 c soy curls, soaked in hot water for a minute, drain
1 medium size onion, sliced
2 garlic sliced
2 green onion, sliced
1 potato, thinly sliced, like super thin
1/2 c frozen spinach, chopped
15 fresh basil leaves, chopped
10 white mushroom buttons, sliced
1-2 tsp exxxtra hot El Yucateco
1/2 bag of VH pad Thai sauce
Magi liquid seasoning and Vegeta powder, to taste
1 tbsp olive oil
Heat oil, saute garlic onion potato mushrooms, until potatoes soften (about 8- 10 mins)
Add in noodle and soy curls, stir
Add in pad Thai sauce then veggies
Drop in hot sauce and season with Magi and Vegeta
Cook for another 5 mins
Spicy Pad Thai
