My 7 yo Boy loves this! Basing on Sayur Nangka, one of my favorite soups 🙂
Into a rice cooker,
1 1/4 c rice, rinse and drain
1 can jackfruit in brine, drain, rinse
1 can coconut milk
2 heaping tbsp cooked black beans
1/2 tbsp (or enough to taste) Vegeta powder
Generous pinch cumin seeds
1/4 tsp turmeric powder
1 Indonesian bay leaf (daun Salam)
2 dried kafir lime leaves
1 slice dried galangal
Mix all in rice cooker, then add
1 portion of either medium-firm or firm tofu (from the box, slice tofu into 3 portions, and just use 1) – rinsed, cubed
Let the rice cooker do the magic
Serve as is or with salad, or whatever side you wish !
