Almost weekend, hey. Today is another blegh day for us here, up north. Smoggy and chilly. Yesterday the morning started bleak as well, however later in the afternoon it became hit and sunny. Today? It’s close to 2 PM and still looking meh, so I guess we won’t see the sun.
I ate a bag of chips the other day and as always they would hurt the inside on my mouth so much, due to the bazillion salt content. This always happens. A moment of yummness that would end up as week-long hurtness 😅 I don’t seem to learn my lesson as the moment I notice no more hurting mouth, I would start consuming new bag of chips 😅 Normally, mouthwash for coldsore would help, yet it’s been days and my mouth still hurts 😅🫤😅🫤
Today I’d like to share one of my favorite foods from Indonesia. My childhood food. My Mama never made it tho, my late maternal grandmother did. ALWAYS did, whenever we came to visit her, as she knew I love it so much. Spiced toasted coconut 😍 For today’s toasted coconut, I added ground beef to the mixture 😊
500 g lean ground beef
1/2 of a small onion
4 garlic
1 tbsp sunflower oil
2 tbsp water
1/2-1 tsp ground coriander
2 tsp chicken bouillon powder
1.5 bags of unsweetened desiccated coconut
1/2 onion
5 garlic
1 thumb ginger
1 tsp ground coriander
1/4-1/2 tsp galangal powder
2 tbsp sunflower oil
2 tbsp water
Dark rown sugar to taste
Chicken bouillon powder, to taste
A little water
In a food processor, mix onion, garlic, oil, and water until smooth, set to side.
Brown beef, then pour in onion mixture, stir and cook until beef is cooked through, season with chicken bouillon powder and ground coriander. Spoon beef onto a plate.
Using the same food processor, mix garlic onion, water, oil, ginger until smooth.
Using the same pan, pour in the paste, saute til fragrant then stir in coconut.
Add in brown sugar, chicken bouillon powder and water, stir to combine well.
Add in cooked beef, stir well. Cook until coconut are browning, on medium heat, stirring continuously.
Serve with rice 😊
Serundeng Daging Giling
Ingredients
Beef Spices
