I tried veganizing my go to chickpea flour brownies. These were amazing good but a tad crumbly easily. Original ingredients in bracket, just in case you’d like to give a try veganizing it as well, perhaps you can do better in substituting ingredients than I did 😀
3/4 c chickpea flour
1/4 tsp each salt and BP
1/2 c coconut palm sugar (orig was brown sugar)
1/4 c cocoa powder
6 oz vegan chocolate (orig was semisweet)
1 tbsp ground flax
2 tsp vanilla essence
3 tbsp white bean aquafaba, 3 tbsp black bean aquafaba (orig was 2 eggs)
6 tbsp solid coconut oil (orig was butter)
Melt chocolate, cocoa, coconut oil in micro (orig was over simmering hot water)
Mix dry
Mix the rest with balloon whisk until combined, then pour in choc mixture followed with dry mixture
Pour into parchment lined pan
Bake on preheated 350 F for 35 mins (orig was 15-17 mins but my veganized batter still very much runny)
