Got myself a 8×10 ft of greenhouse frame yesterday. I know it’s the end of Summer, I also still need to build and buy panels as well, but at least a step forward. My front yard also moving towards its goal. So am happy 😊
The downside of yesterday was raining, I wasn’t well too. Meh. It seems every weekends my youngest would become sick, and this momma would follow suits. It’s like almost every damn weekends. If not raining, it’s sickies. So everything is moving slowly. That’s okay, at least things moving.
I have a pastry recipe to share today. A super simple one 😊
1 box puff pastry, thawed overnight in the fridge
3.5 c gooseberry
1 c sugar
5 tbsp cornstarch
3/4 c water
1 block cream cheese, room temperature
2 tbsp icing sugar
1 yolk mixed with 1 tbsp water
Boil gooseberry with sugar, until sugar melted. Mash gooseberries a little if you like, while boiling.
Mix cornstarch in water, then pour mixture into the pot. Stir. It will thickened. Take off from heat, cool to room temperature.
Beat cream cheese with icing sugar, then beat in cooled gooseberry, until creamy.
Open puff pastry and lay on clean flat surface, slice into squares. On each side (watch the vlog), make slices but not cutting through.
Preheat oven to 400 F
Brush sides of puff pastry with beaten yolk, and spoon gooseberries cream to center. Bake for 20-25 mins
