1 block of firm tofu
1/2 c chopped cilantro
5 white button mushrooms, sliced
1/2 of a red bell pepper, sliced
1/2 tbsp olive oil
2 tbsp diced onion
1 tsp cumin powder
1/2-1 tsp sweet paprika powder
1 tsp lemon juice
Maggi liquid seasoning to taste
1 can black beans, drain, rinse
Heat oil saute onion, mushrooms, bell pepper, to soften
Stir in tofu, cook for 2 mins
Stir in black beans and cilantro
