I don’t think I should call this as scrambled egg, however, vegans online call it as so. In Indonesia we eat this as well, even before I went veganish. On rice tho, not on toast. I also have to mention that we don’t really use chickpea flour, kala namak, nor nutritional yeast 🙂 We just scrambled the tofu 😀
1 block extra firm Tofu, drain and press, then crumble
2-3 tbsp olive oil
1/2 medium onion, diced
2 garlic, diced
1 bell pepper, diced
1 tbsp chickpea flour
1 tbsp nutritional yeast
1 pinch turmeric powder
Vegeta powder to taste
2 generous pinch kala namak
Heat oil, saute onion garlic pepper until soften
Stir in crumbled Tofu and the rest of the ingredients
Serve on toast. Top with avocado slices and sprinkle with freshly cracked black pepper
