I’ve never eaten anything pork in my life, however, since living veganish, I have a lot of canned green jack fruits in my pantry. Most of the times, I use them for Indonesian dish. Browsing around, I learned about the existence of vegan pulled pork, using green jack fruit. While I do not know if it’s similar to real pulled pork, anything with jackfruit, ripe or green, I just love them 🙂
2 large cans of green jackfruit (in brine), drain and rinse
1/2 of an onion, sliced thinly
3 cloves of garlic, minced/chopped
1-2 tbsp olive oil
1/4 c veggie broth
1/2 c BBQ sauce
Preheat oven to 400 F
Heat oil, saute onion and garlic until soften
Stir in jackfruit, cook covered for 5 mins on medium heat
Pour broth, cook covered for 8 mins (til softened)
Mash/shred jackfruit either with potato masher or fork
Line a baking sheet with aluminum foil and grease lightly
Spread shredded jackfruit on sheet and bake for 15 mins
Take out and mix with BBQ sauce and cook for another 10 mins
Serve in buns!
