I can have this daily, I kid you not. I love sweet potatoes and yams.
2 super large sweet potatoes
1 tbsp salt
Water
2 tbsp olive oil
1/2 – 1 tsp minced garlic
1/2 tsp dried thyme
1/4 tsp cayenne powder, optional
2 tsp parsley flakes
Cover sweet potatoes with water in a pot
Add in salt
Bring to boil and cook for 15 mins long (soft but still firm)
Drain and cut into wedges
Mix olive oil, garlic, thyme, a tsp parsley, and cayenne if using
Brush wedges and grill for 7 mins
Sprinkle with the other tsp of parsley, serve
