Sunny today, am so excited! Yesterday and last night was raining, so this morning when I walked out in the backyard, it was nice fresh earthy scents in the air 😍
I harvested my rhubarb yesterday in between the rain, in the evening. I wasn’t planning to as I just planted them 2 mo ago. Regardless how big they became, I wanted them to establish nice roots in the raised bed, with hope next year they will return strong. So I didn’t want to harvest at all this year. However! I found so many stalks were cut off, as I was pulling up weeds in the morning. We have a neighbor that helped themselves to the rhubarb it seems 😅 I am okay with it actually, if only they knew what my purpose is with the rhubarb this year, I guess. But since now some stalks are chopped off, I may swell harvested some to myself I thought. For today’s recipe, I made a quicky breakfast Peanut Butter and Chocolate Chips muffins for the boys. They had theirs with a cuppa cold chocolate milk and also egg sandwich as well 😊
2 c flour
1 tbsp BP
A pinch of salt
3 tbsp sugar (almost 1/4 c)
2 extra large eggs (watch the vlog)
1/4 c smooth PB
1/4 c lilac jelly
2 tbsp sunflower oil
3/4 c milk
Choc chips as needed
In a food processor, mix lilac jelly, PB, oil, and eggs into smooth mixture.
In a bowl, mix flour, salt, BP to combine, then pour on PB mixture, as well milk. Mix until just combined
Pour batter onto greased muffin pan and top with choc chips
Bake muffins for 18-20 mins on preheated 400 F
