This is picadillo inspired dish, as there are varieties of picadillo in differ countries. In this house we love serving it with flavored rice 😀
Vegeta Rice (rice cooker) – 6 serving
2 1/2 c rice, rinse
1/2 c frozen mixed veggies (corn and peas), quick rinse
Enough water for the rice cooker
Cook per rice cooker
Picadillo – 7 serving
Heat and saute
2 tbsp vegetable oil
1 medium onion, slice
5 garlic, slice
1-2 tsp whole cumin
Stir in and brown
300 g ground beef
Add in
2 bay leaf
2 large potatoes, cubed
2 large carrots, slice
Pour in
1 tin condensed tomato soup
2 tins water
Add in
2 tsp dried parsley/parsley flakes
1 small bottle pickled capers, drain
2 beef cubes (bouillon)
2 tbsp sugar
Cook until potatoes soften
Serve with rice

Rice
- 2 1/2 c rice rinse

- 1-2 tsp whole cumin
- 300 g ground beef
- 2 bay leaf
- 2 large potatoes cubed
- 2 large carrots slice
- 1 tin condensed tomato soup
- 2 tins water
- 2 tsp dried parsley/parsley flakes
- 1 small bottle pickled capers drain
- 2 beef cubes bouillon
- 2 tbsp sugar
Instructions
- Heat oil and saute onion, garlic, cumin
- Stir in ground beef and cook til browning
- Add in bay leaf , potatoes and carrots
- Pour in soup and water
- Add in capers, season with parsley, cubes and sugar
- Cook until potatoes soften
- Serve with rice
