Happy Wednesday!
July is approaching fast, it’s crazy. 1 more day of school for the boys, 1 more day of volunteering at the library for me, and Summer breaks will commence 😊 Are you as excited as us? 😊 I have a plum tree, a hydrangea tree, 2 haskaps plants, 12 raspberry plants and 2 currant plants to plant and/or to move! So yeah, am pretty excited for Summer break 😁 Those plants will require man power to do as we have to flatten out hilly area of the backyard, build large raised bed gardens for the raspberries and haskaps, and when all those are done, gotta work on the frontyard still 😅 So many things to do, so little time it feels!
Today I repotted half of my orchids. Tomorrow I will do the other half as I need a couple more bigger pots 😊

This was our dinner last night. I honestly don’t know what to call it. It’s not soup, it’s not stew. It’s Turmeric Beef in Coconut Milk 😁 So there is like liquid 🤣 Great with warm rice!
500 g ground beef
1 tbsp onion powder
1 heaping tsp garlic powder
1 tsp ground coriander
1 tsp cumin powder
1/4 tsp turmeric powder
1/4 tsp black pepper powder
1 tbsp chicken bouillon powder (more or less, adjust the taste)
1 can mixed beans, rinse
1 can sweet corn kernels, rinse
1 bag frozen chopped spinach, thawed, and squeeze liquid out
1 can coconut milk
1 can of water (measured using coconut milk can)
2 Indonesian bay leaves (daun salam)
Brown beef, season with spices, then stir in beans and corn
Pour in coconut milk, spinach, salam leaves and water, adjust flavoring with bouillon powder
Cook on low-medium heat for 10-15 mins
Serve with warm rice or as is
