Happy Monday! Hope your day is off to a good start 😊 It’s not sunny here and we are supposedly expecting wetness throughout the week, but between the gloomy clouds, we can see a little of the blue skies. In fact, this morning the news said, other parts of BC will be seeing snow. Fun hey. Snowing in June 😁 This happened once if not twice before 😅
Due to wet days, I didn’t get to pick some yellow dandelion for jelly making. Today they all have turned into whites and ready to fly everywhere as pollen 😅 Darn it.
For Muffins Monday today, I baked Lemon Poppy Seeds Muffins 😊
2 c flour
1/2 scant c sugar
2 tbsp poppy seeds
1 tbsp BP
A pinch of salt
2 tbsp lemon juice (watch the vlog)
Enough milk
2 eggs
6 tbsp vegetable oil
2 tbsp icing sugar
3 tsp lemon juice
Grated of lemon peel
Mix dry ingredients in bowl until completely combined, set aside
In a 1 c measuring cup, pour lemon juice, then fill up milk to the brim. Pour mixture into a food processor. Add in eggs and vegetable oil, mix til completely combined.
Pour liquid into dry ingredients bowl, mix just to combine. Do not over mixed.
Divide batter evenly (this makes 6 large muffins), then bake on preheated 400F for 18-20 mins.
Meanwhile, grate a lemon peel (wash clean lemon first).
Take out muffins from pan. Quickly mix icing sugar and lemon juice, and glaze the top of the muffins, and top each with grated lemon peel.
