Almost end of school year, here in Canada. My boys schools are busy with field trips and fun activities. Today, my oldest and the whole class will be going to the cinema, while my youngest and the whole class will be going for a swim and picnic in the park. Sound fun both of activities. As for me? Continue moving furnitures from the boys rooms 🤣 I finished cleaning, rearranging and decorating my oldest’s, now time to move on to my youngest’s 😁
Yesterday after dropping off my oldest at his school, I kidnapped my youngest to come with me to our medical clinic. Normally I would drop him off right after his brother, but since we had time still, I took him for a tiny trip 😁 I have been losing tons of hair, like unbelievably crazy. Mid life, definitely tons of crisis, I guess 🤣 When we arrived at 8.35 on the dot, line-up was about 5 people already, and the assistant/nurse went up to the front line to put out a notice of “no walk in today”, like the fudge. Hard enough to get an appointment, nothing is less than 3 mo wait, and then to have walk in unavailable as well, is just meh 😅

Today’s muffin is my favorite! I like to think that it’s a healthier muffin since it’s using moringa powder 😅 Just go along with it 😁
Chocolate Layer
1 c flour
1/2 tbsp BP
A pinch of salt
2 tbsp cocoa powder
1/2 c milk
3 tbsp oil
2 tsp vanilla essence
1 egg
1/4 c lilac jelly (homemade, from the other day)
1 handful raisins
Moringa Layer
1 c flour
1/2 tbsp BP
A pinch of salt
1 tbsp moringa powder
1/2 c milk
3 tbsp oil
1 tsp lemon juice
1/4 c lilac jelly (homemade, from the other day)
1 handful semi sweet chocolate chips
Grease muffin pan with melted unsalted butter, set to side
Preheat oven to 400 F
Make the chocolate layer first by mixing dry ingredients in a bowl, make a well in center.
Using food processor, mix milk, oil, egg, essence and jelly until completely combined. Pour into dry ingredients, mix to just combine.
Divide batter into 6 muffin holes, top with raisins
For moringa layer, do the same steps, then pour on chocolate layer. Top with chocolate muffins
Bake for 18-20 mins!

Two-Tone Chocolate Moringa Muffins
Ingredients
