Another smokey and cloudy morning here. I do love starting my post with weather updates, hey 🤣
I’ve been up since 4ish AM and couldn’t go back to sleep, meh. My oldest went to washroom in the morning and somehow the sway he opened his washroom door was loud, it startled me 😫
Lucky I’m a stay at home mom, these days, I can nap later on 😁😁😁😁
Yesterday I was out and about and only around 6 PM I realized that I didn’t have any snacks to pack for my sons lunchbag. So like a whirlwind storm I hurriedly bake these muffins. By 8 PM I was already on my bed watching a Psyche episode before hitting lalaland 😉
Following recipe makes 6 large muffins. Enough for Thursday and Friday, and 2 extra that I had a bite from one of them while packing away the rest 😁
2 c flour
1/2 c sugar
1 tbsp BP
A pinch of salt
2 eggs
2 tbsp whole milk powder + enough water to make 1 c liquid
1 tsp vanilla essence
6 tbsp vegetable oil, preferably sunflower, or if you’d like, melted unsalted butter would be superb too!
2 c semisweet choc chips
Mix flour, sugar (if yours is superfine, is even better!), BP and salt in a bowl. Make a well in center.
In a measuring cup, add milk powder then pour enough water to make a 1 c milk liquid. You can use milk instead this hassle. I ran out of milk, so I used milk powder ✌️🤣✌️🤣
Beat eggs to combine, then beat in essence, milk, and oil.
Pour wet ingredients into flour bowl, mix slowly, then add in choc chips, fold mixture to just combined. You don’t want to over mixed.
Grease a large (bigger than regular) muffin pan with butter/melted butter/oil. Scoop 1/2 c batter into each cavities
Bake for 18-20 mins on preheated 400 F
Serve warm is heaven!

Giant Choc Chips Muffins
Ingredients
