It’s a cloudy Monday morning here at the moment. Boo-hoo. Warm tho, for once. Past days we were still seeing minus 4 to minus 8 in the morning, but today it was plus 6 when we left home for school. Regardless, I have the cold. Since Saturday. Meh.
My youngest had swimming classes last week and for sure since days were still chilly and windy, he caught cold with his wet hair coming out of the pool, heading back to school. This always happens, when it was my oldest, now with my youngest. As it is always during “Spring” time, yet since we are up north, Spring is still Winter, while real Spring is almost never. Straight to Summer 😅
Since I’m easily sick, so yeah, I caught my youngest’s sniffles. Double boo-hoo. In shorts, wish school would choose better time for swimming class, to accomodate my health 😅🤣😅🤣
Today’s recipe share is Sesame chicken. Just simple cooking, but oh so tasty for rice.
2 tbsp olive oil
2 chicken pieces with bones and skins
500 g cubed chicken breast, skinless, boneless
1 big thumb of ginger
6 baby potatoes, quartered
A small bowl of mixed veggies (Cauliflower, broccoli, baby carrots)
1 tsp lemon juice
Hoisin sauce, to taste
Oyster sauce, to taste
Sweet soy sauce, to taste
Sriracha sauce, to taste
Chicken bouillon powder, to taste
Sesame oil, to taste
A generous pinch of ground white pepper
1/4-1/3 c water
Sesame seeds
In a pan, add oil, crushed or sliced ginger and chicken. Cook for 1-2 mins, then add in lemon juice. Continue cooking, covered, for 5-8 minutes, stirring now and then.
Add in sliced veggies, continue cooking, covered, for another 5 mins.
Take off lid, season with sauces, powders, and sesame oil. Pour in water. Cover, and continue cooking until boned in chicken is cooked through.
Before turning off stove, sprinkle with sesame seeds.
Serve with warm rice.
