Happy Tuesday, Friends!
After 3 days off (yeah including the weekend), why do I still feel greedy? Like 3 days not enough 🤔🤣🤔🤣 Why “lazy day” for an adult is just not the same? We still need to do chores, dammitt 😅 Not really having a lazy day for ourselves. When the long weekend were approaching, I planned to nap, nap, nap, but nope. Saturday, we went to Winter festival. Before and after, chores. On Sunday, we walked from home to downtown, for fresh air and feeling the healthy life…sure, sure 🙄 Before and after, chores! On Monday, went shopping for grocery and school supplies, and of course, before and after, never ending chores. Seriously, no time to nap 😭😅😭😅
At least I still managed to prepare awesome meals. I made Vietnamese soup called Pho, prepared Hungarian rolled cake called Palacsinta and stuffed myself with my favorite simple salad made of quinoa 😍
I will share Pho and Palacsinta recipes in near future. For today, I am sharing the quinoa salad recipe 😊
1 c quinoa
2 c water
A bunch of cilantro
A box of fresh button mushrooms
1 red onion
Wild Wonders tomatoes
Freshly cracked black pepper
A drizzle of light olive oil (optional)
2 fresh limes
A pinch or two Vegeta powder
Rinse quinoa and boil in 2 c water
Lower the heat, cover with lid and continue simmering for 15 mins
Take off from heat, let stand for 5 mins
Take off lid and fluff cooked quinoa, set to side
Slice thinly cilantro and place in a bowl
Peel skin of mushrooms, wash and slice, dump it into the bowl as well
Dice the onion and add it into the bowl
For the tomatoes, you can either halve them or leave them whole, and as many as you like – add it to the bowl as well.
Mix everything including the cooked quinoa
Flavor the salad with freshly juice lime, black pepper, Vegeta powder and olive oil (if using).

Quinoa Salad
Ingredients
- 1 c quinoa
