Playing with my food, as always 😊
I know some would say rectangle pan is for savory dish not for dessert, unless it’s poked cake or glazed cinnamon rolls, but while living in European countries, I learned it’s the norm to bake pies on rectangular pan, especially for apple pies. While it would be called “square” pie, in North America such pie is known as slab pie.
My household was hit by the cold AND flu bug. Misserable two weeks we had. Happy finally my oldest is back at school, youngest back to his cheery self and this momma is back to scrubbing the inside of the oven 😂 Lucky we have one tough alpha, he took care of us, yes, but my gosh, the house was like an abandoned wrecked ship 😌
Tons of chores to do, but of course, apple pie first 😉
Filling
- 12 apples, skinned, cored, grated
- 1/3 c sugar
- 1 tsp cinnamon powder
- a pinch of freshly grated nutmeg
Pie Crust
- 100 ml unsweetened almond milk
- 1/2 tbsp each sugar and active dry yeast
- 3 tbsp ground flax
- 6 tbsp water
- 3 c flour
- 6 tbsp sugar
- a pinch of salt
- 200 g vegan margarine
How To
- Mix all ingredients for filling in a bowl, set aside (it will produce juice)
- Stir in sugar in milk, heat to lukewarm, then stir in yeast, let stand to bloom for 5 mins
- In a bowl, bloom flax meal in water, set aside
- In a large bowl, mix flour, sugar and salt. Pour in yeast mixture and flax meal mixture, stir with wooden spoon
- Knead in margarine
- Divide dough into 2 equal portions. Roll one as bottom crust.
- Strain grated apples from its juice, and spread evenly on crust. Roll the other portion and top crust, poke holes all over
At this stage, pie is ready to be baked, but as I wanted to play with my food, I didn’t roll the second portion and lay it as the top crust. Instead I rolled it, and cut it as a tree. With a little help from my leaf-cookie cutter, I made some leaves, flowers and a little bird.
With the apple juice, brush all over crust, then bake the pie on preheated 350 F for 30 mins. Take out pie, brush with more apple juice and bake for another 5-8 mins
