My husband brought home a new baking mold, so naturally my 3 yo demanded me a cake please, mommy, a cake please.
The recipe I will be sharing is awesome to bake as banana bread loaf or baked as muffins/small banana bread-cakelettes.
It is super good served warm, as that’s how we finished the cakelettes, impatient little hands, couldn’t wait until they cooled down much 😅
I am a sugar girl, don’t preach on me 😂, but since I had some dates leftover of my ‘healthy’ snack, I made the bread/muffins using dates 😂
Dry Ingredients
- 2 c flour
- 1 1/2 tsp BSoda
- 1/2 tsp salt
Wet Ingredients
- 10 pitted dates
- 5 bananas, mashed
- 1/4 c each soynog, water, vegetable oil
- 1 tsp vanilla essence
- 1/2 c chocolate chips
How To
- Preheat oven 350 F,
- Mix dry ingredients in a bowl
- Process dates with oil, water, and soynog until smooth
- Pour date mixture/liquid into mashed bananas, stir to combine
- Pour mixture into dry ingredients, stir to combine
- Stir in chocolate chips
- Pour batter into mold/pan
- Bake for 45-50 mins
Now, if you’d like it with sugar instead dates, use 1 c sugar, 4 bananas instead 5, and no need for soynog
