Thought I’d share a baking video today instead ukulele, to bring some sunshine to my cloudy and wet days 😁
I have Lemon and Blueberry muffins, which the combination of these two, taste Summery somehow, no? 😎

2 c flour
1/3 c sugar
1 1/2 tsp BP
1/2 tsp BSoda
A pinch of salt
Grated lemon peel from 1 lemon (or a drop or two of lemon oil) – it seems I forgot to show and mention it on the vid!
1 c nut milk
1/3 c corn oil
1 tbsp lemon juice
1 1/s tsp vanilla extract
1 c frozen blueberries
Icing (optional)
Enough icing sugar
A couple drops of lemon juice

Servings: 0
Ingredients
- 2 c flour
- 1/3 c sugar
- 1 1/2 tsp BP
- 1/2 tsp BSoda
- A pinch of salt

- 1 c nut milk
- 1/3 c corn oil
- 1 tbsp lemon juice
- 1 1/2 tsp vanilla extract
- 1 c frozen blueberries
Instructions
- Mix dry
- Add in wet
- Mix until just combine
- Fold in blueberries
- Bake on preheated 350 F 25 mins
- Icing (optional)
- Enough icing sugar
- A couple drops of lemon juice
