How have you been, friends? I have been super occupied with my new job. I am loving it so far. A couple of weeks ago I passed the exam to get my authorization, woo-hoo 🥳
I have a super easy cake recipe to share today. They are made using a specific mold/pan, however you can use a pan like you would make a pancake, if you don’t have it 😊
2 c AP flour
1 tsp instant yeast
1 c sugar
4 eggs
350 ml coconut milk
1 tsp vanilla essence
Peanut oil
Chocolate sprinkles (chocolate and milk based, would be perfect
Mix dry ingredients in a bowl, set aside
Beat sugar, eggs, and vanilla essence on another bowl, until thickened and fluffy
Let rest batter for 30 minutes
Heat your pan or mold on super low heat
Brush your pan or mold with peanut oil once pan is hot, then pour enough batter. Sprinkle the top with sprinkles, cover with lid
Cook cakelettes for 5-8 mins
Serve warm is best 😍😍😍😍
