Hi Beautiful People! I had 3 ripe bananas at home that the kids did not feel like finishing (my boys are naught. Once they see bananas skins no longer smooth yellow looking, they won’t touch them đ ), so I turned them into Banana Butter Rolls instead đ€€ These are super good served still warm (not hot! Filling will be too hot, so watch out), after dinner, yuummmm đ€€ They are easy to make đ
1 c cashew milk, lukewarm
1 tbsp sugar
2 tsp active dry yeast
1/4 c melted df butter/margarine
3 1/2 c bread flour
1/3 c sugar
A generous pinch of salt
Banana Butter
3 ripe bananas
1/4 c sugar
1-2 tbsp lemon juice
2-3 tbsp cornstarch
Extra lemon juice (optional)
Brown sugar for sprinkling (optional)

Banana Butter Rolls
Ingredients
Dough
- 1 c cashew milk lukewarm
- 1 tbsp sugar
- 2 tsp active dry yeast
- 1/4 c melted df butter/margarine
- 3 1/2 c bread flour
- 1/3 c sugar
- A generous pinch of salt
Banana Butter
- 3 ripe bananas
- 1/4 c sugar
- 1-2 tbsp lemon juice
- 2-3 tbsp cornstarch
Topping
- Extra lemon juice optional
- Brown sugar for sprinkling optional
Instructions
- Mix sugar in milk, sprinkle yeast in, let stand till bubbly
- Mix in melted fat
- In a bowl, mix flour, sugar and salt, pour in wet ingredients, knead
- Cover with cling, let rest for 30 mins
Butter
- Meanwhile make the butter by mashing the bananas and mixing it with sugar
- Add in juice and starch
- Cook in microwave until thickened (2 mins total, 30 secs intervals)
Rolls
- Roll dough, spread banana butter, sprinkle with sugar
- Roll and seam to seal
- Slice and place on pan, let rest until doubled in size
- Bake on preheated 350 F, 25 minutes
- Brush the top with lemon juice, then sprinkle with brown sugar
- Bake for another 5-10 minutes
