My 1st sourdough bread, you guys Or loaf? Not my 1st trial with sourdough starter though, as my 1st was using the starter to make pretzels instead loaf of bread hahaha
SUCCEEDED, woo-hoo!

Levain:
1 tbsp sourdough starter
100 g bread flour
100 g water
Mix levain ingredients, cover with cling wrap. Let stand room temperature overnight
Bread:
Levain
1 kg bread flour
700 g water (room temperature)
Mix flour, water, and levain with wooden spoon (it will be sticky)
Cover and let stand for an H
After resting:
20 g salt
50 g water
Knead in water and salt
Cover and rest for an H
After resting 2nd time:
Folding time set (3 times per set), every 30 mins – repeat 4 times
Rest 4 H
After resting:
Divide into two
Shape to round
Rest 20 mins
After resting:
Fold, shape
Place into bowls, lined with tea towels and floured generously
Chill overnight
The next day:
Score with razor
Bake covered, preheated 450 F, 30 mins
Then bake uncovered, 20 mins
Rest then slice
