The City’s contractors were working on building side walks right next to our place. They started early morning. Not knowing whether they had some breakfast or not, I quickly whipped up some muffins for their morning snacks 😊
I made two kinds of steamed muffins, banana berry and apple crumble, as they can be done in a matter of time rather than baked muffins.
My kids love these muffins. Sometimes I packed a box for my 7 yo son’s teacher last year, some other times for my husband to bring to work for work colleagues 😀
Banana Berry Steamed Muffins
280 g
1 c sugar
1 tsp each BP, baking soda
2 tbsp soy milk powder/almond milk powder (if non vegan, can use buttermilk powder or full cream powder)
A pinch of salt
1 banana
3 tbsp aquafaba
1/2 tbsp vanilla essence
100 ml oil
70-80 ml water
1/2 c full frozen mixed berry
Mix dry ingredients
Into dry, add in roughly mashed banana and the rest of the ingredients
Stir in frozen berry
Drop 2 tbsp each batter into muffin cups and steam for 20 mins
Apple Crumble Steamed Muffins
2 c flour
1 c sugar
1 tsp each BP, baking soda
A pinch of salt
4 tsp soy milk powder/almond milk powder (non vegan can use buttermilk powder or full cream powder)
1 tsp allspice powder
3 tbsp aquafaba
100 ml oil
100 ml water
1 sweet apple, chopped
1 envelope natural quick cooking oatmeal
2 tbsp coconut palm sugar
A handful all bran buds
A handful raisin
Mix dry
Mix in wet
Stir in chooped apple
Drop 2 tbsp each into muffin cups
Sprinkle with oatmeal
Steam for 15 mins
