Once awhile I like ‘baking’ cookies using the microwave, especially when I have other cooking/baking going on in the oven that is more time-important than the cookies. Like for example, dinner in the oven, and the sweets in the microwave, once you are done having your dinner, the cookies will be done cooling in the rack. Perfect timing 😉
With this following recipe of vanilla cookies, you will be able to create other flavors/cookies of your preference. I am adding 5 variations so you would be able to have 6 differ cookies, easy peasy.
Basic Cookies:
1/2 c shortening
3 tbsp aquafaba
1 tbsp ground flax
2 tbsp almond milk
1 tsp vanilla essence
2 tsp BP
A pinch of salt
2 c flour
Beat shortening, sugar, flax egg, milk, BP, salt to combine
Beat in flour
Beat in additional of 1 tsp vanilla essence, 1 tbsp aquafaba and 1 tbsp milk
Shape by a tbsp and press each with the bottom of a glass (or press with fork)
Microwave for 1 1/2 mins to 2 mins on 50 % power. Cool on rack.
(I line the microwave plate with parchment paper and microwaves 6 drops of dough each time. I rotate every 30 seconds for better cooking)
Variations:
Choc chips: add 1 c Choc chips
Lemon raisin: add 1 tsp lemon juice and 1 c raisin (or you can use grated peel off lemon/orange)
Coconut: add 1 c coconut flakes either toasted or colored plus 1/2 tsp of almond extract
Spiced: add 2 tbsp molasses and 1 heaping tsp allspice powder (if not cinnamon mixed with nutmeg, ginger, and clove powder)
Mixed nuts: 1 c chopped mixed nuts – our fave are filbert, Brazil nuts, almond, cashew, pecans
NOTE: make sure your microwave power is 50% or you will either burn the cookies or end up with hard cookies
Six-way Microwaved Cookies
