We made delicious vegan dip with matpe beans the other day and there was still some cooked matpe beans in the fridge. So I turned them into breakfast in a jar ?
1 tbsp chia soaked in 3 tbsp cashew milk until bloomed
Process into thick smoothie:
1 banana, frozen
2 strawberry, frozen
With 1/4 c cashew milk
Process into paste/mashed potato texture:
4 tbsp cooked super soft matpe beans
2-3 tbsp almond milk
1 nectarine
3 tbsp maple syrup drizzle

Ingredients
- 1 tbsp chia soaked in 3 tbsp cashew milk until bloomed
- 1 banana frozen
- 2 strawberry frozen
- With 1/4 c cashew milk
- 4 tbsp cooked super soft matpe beans
- 2-3 tbsp almond milk
- 1 nectarine
- 3 tbsp maple syrup drizzle
Instructions
- Spoon chia into the jar
- Turn banana, strawberry, milk into smoothie and spoon lightly ontop of chia layer
- Turn beans into a paste with milk, spoon ontop of smoothie
- Top with nectar slices
- Drizzle with maple, serve
