This is actually what have you kind of Biryani ?
I often prepare dishes that basically what have you kind, for obvious reason, using up whatever I have in the fridge/freezer/pantry ?
If you’d like to, you can add or serve it with Gardein beefless strips to make it more complete!
I served mine with Indonesian pickles called “acar”, recipe is included.
In food processor, make powder of:
4-5 cloves
small tip of nutmeg
2 white cardamom
2 star anise
1 stick of cinnamon
2 Indonesian bay leaf (daun salam)
4-5 green cardamom
1 tsp coriander ground
1/2 tsp cumin ground
1/8 tsp turmeric ground
1 c almond milk
20 cashew, in food processor, turn into rough ground cashew
2 handful raisins
6 c cooked medley (mixture of rice, barley, split yellow and green peas – usually for minestrone soup)
3 tsp tomato paste
2 tbsp olive oil
1 onion
2 garlic
1/2 tsp minced ginger
salt to taste
To serve:
pickles
coriander leaf
lemon/lime juice
fried shallots (bawang goreng)
Heat oil, saute spices, onion, garlic, ginger
Stir in medley, rough ground cashew, raisin, tomato paste
Season with salt and pour in milk
Cover lid, cook on high until steam starts coming out. Lower heat to super low, and cook for another 5-8 mins
Release steam completely before removing lid
Pickles:
Cucumber, cut into sticks
Carrots, julienned or diced
1 small onion, sliced
3 garlic thinly sliced
Bird eye chilies, leave whole
Enough water
Vinegar to taste
Sugar to taste
Salt to taste
Chill for 2 H

- Mix everything and chill for 2 H
